Canon is not very forthcoming on the subject of food (although we know that actual fruit and coffee beans do exist, but as rare luxuries, that nutrient packs exist, and that Vila knows what Avon means when he refers to a sandwich).
Terran farming is probably a bad idea because of radiation contamination, but there probably are hydroponic farms. But there are agricultural planets (see Star One). I figure that there are lots of kinds of food analogs to supplement whatever fresh foods can be obtained. (There are also distilleries to make green booze.)
The assumption I use in writing fanfic is that on the Liberator, there are regular sit-down meals for the crew, and that everyone has to take turns cooking and washing up (although this degree of civilized amenity has probably broken down on Scorpio and maybe on Xenon Base). In a way this is irrational--they couldn't all be awake at the same time--but I think Blake would insist on it as a means of instilling group cohesion. I think the others would also find it reassuring, although several of them wouldn't admit it. Nova figures that they heat things up for themselves in advanced microwave ovens...but that doesn't seem very companionable.
I've seen plenty of stories involving "pleasure planets" but somehow no one except me seems worried about where you can find a really good restaurant on shore leave...

Predatrix and I have been known to write fanfic where the whole point of a planetside R&R trip is to pick up some decent grub, especially things like chocolate, caffeine beverage of choice, and herbs and spices...

And refers to being a vegetarian. He's being facetious I think, but it does imply that meat is still eaten and that some people still object to it.

I agree. Although given their backgrounds, most of the crew probably would be more inclined to just heat something up when they felt hungry than plan out and sit down for a meal.
I've used the idea in my fanfic that along with all those clothes and all that treasure on the Liberator that there was a pretty good food store too, but I can see them getting really fed up with having no fresh food available.

This brings up the point of styles of communication in B7--in addition to numerous examples of flat-out lies, misdirections (Tarrant's description of Orac in DotG, for instance), there are smart-ass remarks (Blake's introduction of Cally as his mother in StarOne) and things that are meant as smart-ass remarks that are actually true (e.g., I suspect that Avon really IS shy). So I don't think we can take this as an actual reflection of Vila's dietary practices.

Except that, canonically, they nearly always are.
Maybe this is the explanation of the Andromeda phenomenon through which, most episodes, one of the crew seems to have the week off. At first, they used to explain their absence; now it just happens, but perhaps it's just that so and so is having a nice sleep and no one wants to wake them up just to mention they're facing imminent death.
