Was there only one such 'burial in space' or would there be other such Sarcophaguses (is that the right plural?) running around?

Personally, I'd say there weren't many. Actually, though, I think I managed to sneak my idea about this into my story in tofpa (hint, hint, hint) so I won't say anything else except that she implied she was a near immortal and near immortals don't have funerals that often.
